Description

This Virgin Lava Flow is a tropical, non-alcoholic twist on the classic Hawaiian cocktail. It’s perfect for hot summer days, backyard parties, or kid-friendly gatherings. Made with real fruit and naturally dairy-free, it’s a refreshing drink that feels indulgent without any alcohol. Whether you serve it in a tall glass, a pineapple shell, or even freeze it into popsicles, this layered tropical mocktail is pure sunshine in every sip.

Strawberry Layer (Lava)

  • 1 cup frozen or fresh strawberries, hulled
  • 2 tablespoons pineapple juice (or water for a lighter version)
  • 1 tablespoon agave syrup or honey (optional, adjust for sweetness)

Coconut-Pineapple Layer

  • 1 cup fresh pineapple chunks (or canned in juice, drained)
  • ½ banana (for creaminess – optional)
  • ½ cup cream of coconut (for richness) or full-fat coconut milk
  • ½ cup ice (more if you prefer it thicker)

Instructions

  1. Make the Strawberry Base : In a blender, combine strawberries, pineapple juice, and agave (if using). Blend until smooth but thick. Pour the puree into the bottom of 2 tall glasses. Place in the freezer while prepping the next layer.
  2. Make the Coconut-Pineapple Layer : Rinse the blender. Add pineapple, banana, cream of coconut, and ice. Blend until smooth and creamy.
  3. Assemble the Lava Flow : Remove the glasses from the freezer. Slowly pour the coconut-pineapple mixture over the strawberry base. Use a spoon to guide the pour and preserve the separation of layers.
  4. Create the Lava Effect : Use a straw or skewer to gently drag strawberry puree upward through the white layer to mimic flowing lava.
  5. Garnish and Serve : Add fresh mint, a pineapple wedge, or a mini umbrella for a fun, tropical vibe. Serve immediately with a wide straw or spoon.

Notes

Sugar-Free Version: Omit sweeteners and use unsweetened coconut milk.

Make-Ahead: Prepare both layers and store separately in airtight containers in the fridge. Assemble before serving.

Frozen Option: Freeze leftovers in popsicle molds for tropical mocktail ice pops!
