This strawberry pizza recipe features a buttery sugar cookie crust, creamy filling, and vibrant strawberries glazed to perfection. A stunning, easy dessert ideal for summer parties or any special occasion.
Ingredients
For the Sugar Cookie Crust:
1 cup all-purpose flour
¼ cup powdered sugar
½ cup butter, room temperature
For the Cream Cheese Filling:
8 oz cream cheese, room temperature
½ tsp vanilla extract
½ cup granulated sugar
¼ tsp freshly squeezed lemon juice
For the Strawberry Glaze:
1 cup fresh strawberries, mashed
4 Tbsp granulated sugar
1 Tbsp cornstarch
10–12 fresh strawberries, sliced
Instructions
Preheat oven to 325°F (160°C). Combine flour, powdered sugar, and butter in a bowl. Mix into a dough and press into a 14″ circle on an ungreased pan. Bake for 15 minutes, until lightly golden. Cool completely.
Beat cream cheese, vanilla, sugar, and lemon juice until smooth and fluffy. Spread over cooled crust, reaching edges.
Cook mashed strawberries, sugar, and cornstarch in a saucepan over medium heat until thickened and glossy. Cool to room temperature.
Spread cooled glaze over cream cheese layer. Arrange sliced strawberries on top. Chill for 30–60 minutes before slicing and serving.
