Description

Strawberry Crunch Cheesecake Bites are no-bake, creamy, bite-sized treats layered with a buttery Golden Oreo crust, smooth cheesecake filling, and vibrant strawberry crunch topping. Perfect for parties, gifting, or make-ahead desserts.

For the Golden Oreo Crust:

  • 1 sleeve Golden Oreos (about 15 cookies)
  • 3 tablespoons melted butter
  • 1 tablespoon sugar

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 tablespoon sour cream (Grandma’s secret!)
  • 1/4 cup strawberry jam or preserves

For the Strawberry Crunch Topping:

  • 1 sleeve Golden Oreos (about 15 cookies)
  • 1 box (3 oz) strawberry gelatin powder
  • 1/4 cup freeze-dried strawberries, crushed
  • 3 tablespoons melted butter

For Garnish (Optional):

  • Fresh strawberries
  • Whipped cream

Instructions

  1. Line a mini muffin tin with paper liners.
  2. Crush Golden Oreos into fine crumbs. Mix with melted butter and sugar. Press 1 tbsp of mixture into each cup to form the crust.
  3. In a large bowl, beat softened cream cheese until smooth. Add powdered sugar, sour cream, and vanilla.
  4. In a chilled bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture to keep it airy.
  5. Spoon or pipe the filling over the crusts, filling ¾ full. Drop a bit of strawberry jam into each and swirl with a toothpick.
  6. For the topping, crush remaining Oreos and mix with strawberry gelatin, crushed freeze-dried strawberries, and melted butter.
  7. Chill the filled bites in the freezer for 15 minutes, then sprinkle with the crunch topping.
  8. Refrigerate for at least 2 hours before serving. Garnish if desired.

Notes

Grandma’s sour cream tip adds cheesecake-style tang.

Freeze before topping to maintain clean layers.
