Description

Tender slow cooker Salisbury steak meatballs simmered in a rich, savory onion gravy. The perfect cozy meal for busy nights or family dinners.

Ingredients

Scale
  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard (optional)
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)
  • 1 medium onion, thinly sliced

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, salt, and pepper.
  2. Mix just until combined and shape into 16–18 meatballs.
  3. Place sliced onions at the bottom of the slow cooker.
  4. Gently add the meatballs on top.
  5. In a separate bowl, mix beef broth and onion soup mix, then pour over the meatballs.
  6. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
  7. 30 minutes before serving, mix cornstarch and water to make a slurry.
  8. Stir slurry into the slow cooker and let the gravy thicken.
  9. Gently stir and serve hot over mashed potatoes, noodles, or rice.
  10. Garnish with chopped parsley if desired.

Notes

You can use frozen meatballs—just skip the shaping step and add them straight to the slow cooker.

For a retro variation, replace the homemade gravy with a mix of cream of mushroom soup and onion soup mix.

To make this gluten-free, use almond flour instead of breadcrumbs and a gluten-free soup mix.
