Instructions
- Peel and shred the green papaya into thin strips.
- Place papaya in a bowl and sprinkle with salt. Let sit for 10 minutes.
- Rinse and drain the papaya thoroughly.
- In a saucepan, heat vinegar, water, and sugar until dissolved.
- Add garlic and chili to the papaya.
- Pour the warm brine over the papaya and mix well.
- Transfer to a glass jar and refrigerate.
