Ingredients
For the Dough:
-
3 1/4 cups all-purpose flour (plus extra for rolling)
-
3/4 cup warm whole milk
-
2 1/4 teaspoons instant yeast
-
1 tablespoon honey
-
2 large eggs
-
2 tablespoons salted butter, softened
-
1 teaspoon kosher salt
For the Garlic Herb Butter:
-
1 head garlic
-
1 stick (1/2 cup) salted butter, softened
-
1/2 cup grated Parmesan cheese
-
1 tablespoon chopped fresh sage
-
2 teaspoons dried basil
-
1 teaspoon dried oregano
-
1 teaspoon dried parsley
-
1 pinch chili flakes
-
Extra virgin olive oil (for roasting garlic)
For Finishing:
-
2 tablespoons melted butter (for brushing)
-
Marinara sauce (for dipping, optional)
Instructions
Step 1 – Roast the Garlic
-
Preheat oven to 400°F (200°C).
-
Slice off the top of the garlic head to expose the cloves. Place on foil, drizzle with olive oil, wrap, and roast 40–50 minutes until soft and golden.
-
Cool, then squeeze cloves into a bowl.
Step 2 – Make the Dough
-
In a stand mixer, combine flour, yeast, and salt.
-
Add warm milk, honey, eggs, and softened butter. Mix 4–5 minutes until dough is smooth and elastic.
-
If sticky, add 1/4 cup flour. Cover and let rise 45–60 minutes.
Step 3 – Prepare Garlic Butter
-
Mash roasted garlic with butter, Parmesan, sage, basil, oregano, parsley, and chili flakes until smooth and fragrant.
Step 4 – Shape the Tree
-
Line a baking sheet with parchment.
-
Divide dough in half. Roll each into a large rectangle (15×11 inches).
-
Stack them, cut into a large triangle (tree shape), and discard corners.
-
Spread 2/3 garlic butter over one triangle. Place second triangle on top.
Step 5 – Cut & Twist
-
Cut horizontal slices from both sides toward the center “trunk,” leaving the middle intact.
-
Twist each strip away from the center to form branches.
Step 6 – Bake & Serve
-
Brush with melted butter and remaining garlic butter.
-
Bake 25–30 minutes until golden. Rest 5 minutes.
-
Garnish with extra herbs. Serve warm with marinara dipping sauce.
Notes
- For extra cheesiness, sprinkle mozzarella inside before twisting.
- Can be assembled a day ahead and baked before serving.
- Store leftovers in the fridge for 2–3 days, reheat in the oven.
