Ingredients
- 1 package (14 oz) cocktail sausages (Little Smokies)
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon sugar
- 1 tablespoon kosher salt
- 3 cloves garlic, smashed
- 1 teaspoon mustard seeds
- ½ teaspoon whole black peppercorns
- ½ teaspoon red pepper flakes
- 1 small bay leaf
- 1–2 fresh chili peppers, sliced (optional)
Instructions
- Place the cocktail sausages into a clean quart-size mason jar.
- Add the smashed garlic cloves, mustard seeds, peppercorns, red pepper flakes, bay leaf, and sliced chili peppers.
- In a small saucepan combine the white vinegar, water, sugar, and kosher salt.
- Heat the mixture over medium heat until the sugar and salt dissolve completely.
- Carefully pour the hot brine over the sausages until they are fully covered.
- Allow the jar to cool to room temperature.
- Seal the jar tightly with a lid.
- Refrigerate for at least 24 hours before serving so the flavors can develop.

• Add sliced onions or jalapeños to the jar for extra flavor.
