Pickled Troll Toes are spicy pickled cocktail sausages soaked in a garlicky vinegar brine with mustard seeds, chili flakes, and peppercorns. This spooky Halloween appetizer delivers a bold tangy flavor and works perfectly as a party snack. The funny name makes guests curious, while the addictive flavor keeps them reaching for more.


Ingredients

  • 1 package (14 oz) cocktail sausages (Little Smokies)
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon sugar
  • 1 tablespoon kosher salt
  • 3 cloves garlic, smashed
  • 1 teaspoon mustard seeds
  • ½ teaspoon whole black peppercorns
  • ½ teaspoon red pepper flakes
  • 1 small bay leaf
  • 12 fresh chili peppers, sliced (optional)

Instructions

  1. Place the cocktail sausages into a clean quart-size mason jar.
  2. Add the smashed garlic cloves, mustard seeds, peppercorns, red pepper flakes, bay leaf, and sliced chili peppers.
  3. In a small saucepan combine the white vinegar, water, sugar, and kosher salt.
  4. Heat the mixture over medium heat until the sugar and salt dissolve completely.
  5. Carefully pour the hot brine over the sausages until they are fully covered.
  6. Allow the jar to cool to room temperature.
  7. Seal the jar tightly with a lid.
  8. Refrigerate for at least 24 hours before serving so the flavors can develop.

• Add sliced onions or jalapeños to the jar for extra flavor.

• The sausages will taste even better after two days in the refrigerator.
