A bold sweet and spicy jam made with fresh oranges and smoky chipotle peppers. This Orange–Chipotle Citrus Fire Jam delivers a perfect balance of citrus brightness and deep heat, ideal for spreads, glazes, and gourmet pairings.

- 4 large navel oranges (zested and segmented)
- 1 ½ cups granulated sugar
- 2–3 chipotle peppers in adobo (finely chopped)
- 1–2 tablespoons adobo sauce
- 2 tablespoons lemon juice
- ½ cup water
Instructions
- Wash and dry oranges thoroughly, then zest carefully without including the pith.
- Peel and segment the oranges, removing seeds and excess membrane.
- Combine oranges, zest, and sugar in a bowl and let sit for 30–45 minutes to macerate.
- Transfer the mixture to a pot and add chopped chipotle peppers, adobo sauce, lemon juice, and water.
- Heat over medium, stirring until sugar dissolves completely.
- Bring to a rolling boil and cook for 10–15 minutes, stirring frequently.
- Test the gel stage using the cold plate method.
- Once thickened, remove from heat and let cool slightly.
- Pour into sterilized jars and seal using water bath canning or refrigerate.

Remove citrus pith carefully to avoid bitterness
