Description

This healthy veggie egg scramble is a quick, protein-rich breakfast loaded with fresh vegetables, perfect for weight loss, energy, and busy mornings.

  • 2 large eggs (or 3 egg whites + 1 yolk for lighter option)
  • ½ cup fresh spinach
  • ¼ cup diced bell peppers
  • ¼ cup sliced mushrooms
  • 2 tablespoons chopped onions
  • 1 tablespoon olive oil or avocado oil
  • Salt and black pepper to taste
  • Optional: 2 tablespoons shredded cheese (cheddar or feta)
  • Optional: ½ cup cooked sweet potatoes (for a hearty version)

Instructions

  1. Chop all vegetables into bite-size pieces.
  2. Heat oil in a non-stick skillet over medium heat.
  3. Sauté onions, mushrooms, and bell peppers for 3–4 minutes.
  4. Add spinach and stir until wilted.
  5. In a bowl, whisk eggs with salt and pepper.
  6. Pour eggs over the vegetables and let them cook undisturbed for 10–15 seconds.
  7. Gently stir eggs from edges to center until fluffy.
  8. Add cheese if using, and fold in cooked sweet potatoes if desired.
  9. Remove from heat and serve hot.

Notes

You can prep veggies in advance and store them in the fridge for quicker morning assembly.

Use goat cheese or parmesan for stronger flavor with less quantity.

Perfect with a side of roasted sweet potato or whole grain toast.
