			- 1 lb ground beef (lean recommended)
 - 1 cup shredded mozzarella cheese
 - ½ cup grated parmesan cheese
 - 2 cloves garlic, minced
 - ¼ cup chopped fresh parsley (or 1 tbsp dried)
 - ¼ cup breadcrumbs (panko optional for crunch)
 - 1 large egg
 - 1 tsp salt
 - ½ tsp black pepper
 - ½ tsp onion powder
 - ½ tsp paprika (or smoked paprika for depth)
 - Cooking spray or olive oil (for greasing)
 - Optional: refrigerated biscuit dough (if making with biscuits)
 - Optional: 2–3 tbsp cream cheese (if making with cream cheese)
 
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease it.
 - In a large bowl, combine ground beef, garlic, parsley, breadcrumbs, egg, salt, pepper, onion powder, and paprika. Mix just until evenly combined — don’t overwork.
 - Take about 2 tablespoons of beef mixture, flatten in your palm, and place a pinch of shredded mozzarella in the center. If using cream cheese, mix it with mozzarella here.
 - Fold beef over cheese, sealing completely, and roll into a smooth ball.
 - Roll each ball in grated parmesan to coat the outside.
 - Arrange on prepared baking sheet, spacing them apart.
 - Bake for 18–20 minutes, until golden brown, cooked through, and cheese is melty. If using biscuit dough, bake according to biscuit package directions.
 - Garnish with extra parsley and serve hot with your favorite dipping sauces.
 
Notes
- Don’t overmix the beef — it keeps the bombs tender.
 - Chill assembled bombs for 10–15 minutes before baking to help them hold shape and prevent cheese leaks.
 - Freshly grated parmesan sticks better and gives a richer flavor than pre-shredded.
 - Add a pinch of red pepper flakes for heat or sprinkle sesame seeds on top for crunch.
 - To make ahead: assemble, cover, and refrigerate up to 1 day; bake when ready.
 - To freeze: cool completely, store in airtight container, and freeze for up to 1 month. Reheat at 350°F until warmed through.
