Description

Easy One-Pot Beef and Shells is a creamy ground beef pasta dinner made in a single pot. Tender pasta shells cook directly in a savory tomato broth with browned beef, then finish with cream and melted cheese for a rich, comforting weeknight meal ready in about 30 minutes.


Ingredients

  • 1 lb ground beef
  • 2 cups medium pasta shells
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth or beef broth
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish
  • Optional: grated parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the ground beef and cook until browned, breaking it into chunks.
  3. Stir in diced onion and cook for about 3 minutes until softened.
  4. Add minced garlic and cook for another 30 seconds until fragrant.
  5. Stir in tomato paste and cook for 1 minute to deepen the flavor.
  6. Pour in chicken broth and tomato sauce, then bring the mixture to a simmer.
  7. Add the uncooked pasta shells and stir well.
  8. Cover and cook for about 10–12 minutes, stirring occasionally, until the pasta becomes tender.
  9. Remove the pot from the heat.
  10. Stir in heavy cream and shredded cheddar cheese until the sauce becomes smooth and creamy.
  11. Garnish with parsley and extra parmesan before serving.

Notes

Use 80/20 ground beef for the best flavor and richness.

Freshly grated cheese melts smoother than packaged shredded cheese.

If the sauce becomes too thick while reheating, add a splash of milk or broth.

The pasta absorbs more sauce after refrigeration, which makes leftovers even creamier.
