- 1 bay leaf
- ½ tsp turmeric (optional)

- 4 cups green cabbage, shredded
- 2 cups cooked turkey, shredded (or 1 lb ground turkey, browned)
- 1 tbsp lemon juice, freshly squeezed
- 2 tbsp chopped parsley (or fresh dill)
- Pinch of red pepper flakes (optional)
Instructions
- Sauté aromatics:
Heat olive oil in a large Dutch oven or stockpot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and cook for another 30 seconds. - Build the base:
Stir in fire-roasted tomatoes, broth, thyme, bay leaf, turmeric, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes. - Add the cabbage:
Stir in shredded cabbage and simmer for 10 minutes until tender but not overcooked. - Add turkey:
Add cooked turkey and simmer for another 5 minutes until heated through. Adjust seasoning. - Finish and serve:
Remove bay leaf. Stir in lemon juice, parsley, and optional red pepper flakes. Serve hot and enjoy!
