  • 1 cup onion, diced
  • 1 cup carrots, diced

  • 6 cups low-sodium chicken or turkey broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • ½ tsp turmeric (optional)
  • Salt and pepper, to taste
  • 4 cups green cabbage, shredded
  • 2 cups cooked turkey, shredded (or 1 lb ground turkey, browned)
  • 1 tbsp lemon juice, freshly squeezed
  • 2 tbsp chopped parsley (or fresh dill)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Sauté aromatics:
    Heat olive oil in a large Dutch oven or stockpot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and cook for another 30 seconds.
  2. Build the base:
    Stir in fire-roasted tomatoes, broth, thyme, bay leaf, turmeric, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  3. Add the cabbage:
    Stir in shredded cabbage and simmer for 10 minutes until tender but not overcooked.
  4. Add turkey:
    Add cooked turkey and simmer for another 5 minutes until heated through. Adjust seasoning.
  5. Finish and serve:
    Remove bay leaf. Stir in lemon juice, parsley, and optional red pepper flakes. Serve hot and enjoy!
