Ingredients
- 12 ounces pasta (penne, rigatoni, or fettuccine)
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional for extra heat)
- ½ cup chicken broth or pasta water
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley for garnish
- Optional vegetables: sliced bell peppers, mushrooms, or spinach
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
- Season the shrimp with Cajun seasoning, paprika, black pepper, and onion powder.
- Add the shrimp to the skillet and cook for about 2–3 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- In the same skillet, pour in the chicken broth or reserved pasta water and scrape the bottom of the pan to release the flavorful bits.
- Add heavy cream and bring the mixture to a gentle simmer. Stir in Parmesan cheese and allow the sauce to thicken slightly.
- Return the cooked pasta to the skillet and toss until evenly coated with the Cajun cream sauce.
- Add the shrimp back into the pan and gently mix everything together.
- To create the “volcano” effect, pile the pasta high in the center of each plate and spoon extra sauce and shrimp over the top so the sauce flows down the sides.
- Garnish with fresh parsley and serve immediately.

• For extra vegetables, sauté sliced bell peppers or mushrooms with the garlic before adding the shrimp.
• If the sauce becomes too thick, add a splash of pasta water or broth to loosen it.
• Freshly grated Parmesan cheese melts better and gives the sauce a smoother texture than pre-shredded cheese.
