- 2 lbs ground beef
- 1 cup crushed Ritz crackers
- 1 cup shredded sharp cheddar cheese
- 1/2 cup finely diced onion
- 1/2 cup finely diced green bell pepper
- 2 large eggs
- 1/3 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
For the glaze:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tsp yellow mustard
Instructions
- Preheat oven to 350°F.
- In a large bowl, gently mix ground beef, crackers, cheese, veggies, eggs, milk, salt, and pepper.
- Shape the meat mixture into a loaf on a lined baking sheet.
- Mix glaze ingredients and spread half over the loaf.
- Bake for 40 minutes, then spread remaining glaze on top.
- Bake an additional 15–20 minutes or until internal temp is 160°F.
- Rest 10 minutes before slicing.
- Serve with sides like mashed potatoes or green bean casserole.
Notes
Don’t overmix the meat. You can substitute mushroom gravy if you prefer savory over sweet. Leftovers are great cold in sandwiches.
