- ½ cup pumpkin puree (not pumpkin pie filling)
- 1 large egg
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- Optional: ½ cup chopped pecans, ½ cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- In a large bowl, beat butter, maple syrup, and sugar until creamy.
- Add pumpkin puree, egg, and vanilla; stir to combine.
- In another bowl, whisk flour, baking soda, salt, and spices.
- Gradually mix dry ingredients into wet mixture until combined.
- Drop dough by rounded tablespoons onto baking sheets.
- Flatten slightly and bake for 10–12 minutes.
- Cool on tray 5 minutes before transferring to a wire rack.
Notes
For extra chewiness, don’t overbake.
You can drizzle maple glaze on top for added sweetness.
