Ingredients
- 2 cups fresh cherries, pitted and chopped
- 1–2 chipotle peppers in adobo sauce, finely chopped
- 1 cup granulated sugar
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
Instructions
- Wash, pit, and roughly chop the cherries to help them break down faster during cooking.
- Finely chop the chipotle peppers, adjusting the amount depending on your preferred spice level.
- In a medium saucepan, combine cherries, sugar, lime juice, chipotle peppers, and salt. Stir well.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently.
- Once boiling, reduce the heat to low and let the mixture simmer for 20–30 minutes.
- Stir occasionally and mash the cherries with a spoon to reach your desired texture.
- Continue cooking until the jam thickens and becomes glossy.
- Test doneness using the spoon or plate test—jam should coat the spoon or wrinkle slightly on a chilled plate.
- Taste and adjust sweetness or heat if needed.
- Remove from heat and let cool slightly before transferring to clean jars.
Notes
Start with less chipotle and add more gradually to control heat.
Jam thickens further as it cools, so avoid overcooking.
For a smoother texture, blend part of the jam before storing.
Store in the refrigerator for up to 3 weeks or can for longer shelf life.
