Ingredients

  • 1 cup creamy peanut butter (do not use natural peanut butter)
  • 3 tablespoons unsalted butter, softened
  • 1 pinch salt
  • 1½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1¼ cups Rice Krispies cereal
  • 10 ounces dipping chocolate

Instructions

  1. In a medium bowl, mix together the peanut butter, softened butter, and salt until smooth.
  2. Add powdered sugar and vanilla extract. Continue mixing until the mixture comes together into a soft, dough-like consistency.
  3. Gently fold in the Rice Krispies cereal until evenly distributed.
  4. Line a baking sheet with parchment or wax paper. Use a cookie scoop or tablespoon to portion the mixture into mounds on the sheet.
  5. Chill in the freezer for about 10 minutes, then roll each mound into a smooth ball. Freeze again for another 10 minutes until firm.
  6. Meanwhile, melt the dipping chocolate in a heatproof bowl until smooth.
  7. Insert a toothpick into each ball and dip into the melted chocolate, leaving a small circle of peanut butter visible on top.
  8. Place dipped balls back on the tray and remove the toothpicks. Chill in the refrigerator until the chocolate is set.
  9. Serve and enjoy!

Notes

  • If the mixture is too dry and crumbly, add an extra tablespoon of melted peanut butter at a time until it holds together.
